Santorini is what remains of a volcano that erupted around 1600 BC, and its vines grow in ash and pumice. Its wine became famous in the Middle Ages under Venetian influence, which also gave the island's sun-dried sweet wine its name, Vinsanto. Today it is best known for dry, mineral Assyrtiko.
