Blanquette de Limoux is a sparkling wine from the hills around Limoux in the Aude, made mainly from the local Mauzac grape. Local history holds that monks at the abbey of Saint-Hilaire made sparkling wine here in 1531, well before Champagne. It became an AOC in 1938.
