Sherry comes from the triangle formed by Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda, on white chalky albariza soils. In 1933 Jerez became the first Spanish denominación to be officially recognised. The wines are aged in soleras, some under a layer of flor yeast.
