Arbois is the largest named appellation of the Jura, centred on the town of Arbois, and makes vin jaune, whites and light reds from Poulsard and Trousseau. It was among the first French AOCs, created in 1936. Louis Pasteur grew up in Arbois and owned a vineyard nearby, where he carried out work on fermentation.
